Mark Cassar: The Alchemy of Natural Winemaking

Mark Cassar’s journey into the world of natural winemaking is one of passion and dedication. Inspired by the healing power of nature, Mark founded Mar Casar La Maison du Vin Naturel Winery with a commitment to producing sulphide-free wines using ancient, traditional methods. His creation, Sacrum, reflects this dedication. Sacrum is made without synthetic chemicals, herbicides, or added sulphites, embodying a philosophy of physical and spiritual renewal.
A key element of Mark’s winemaking technique is the use of Georgian qvevri—large clay vessels buried underground for fermentation. This ancient method, dating back 8,000 years, allows the wine to develop a unique character and complexity, connecting modern drinkers to centuries of tradition. Mark’s meticulous approach ensures that each bottle of Sacrum is a pure expression of the terroir and natural winemaking process.

Jean Bickle: The Science and Passion of Craft Beer

Jean Bickle, co-founder of Huskie Craft Beer Company, brings a different kind of alchemy to the table—one of scientific precision and creative brewing. The story of Huskie began in 2017, when Jean and his partner Miguel started experimenting with brewing in a garage. Their curiosity and dedication led to the creation of a brewery that prioritizes quality and innovation.
Huskie’s mission is to craft exceptional beers that delight the senses. Jean and Miguel’s approach is rooted in scientific analysis and meticulous attention to detail. They explore every aspect of the brewing process, from ingredient interactions to refining recipes. The result is a range of beers that offer unique taste experiences, made from the finest natural ingredients.
